Masala Dosa - Spice it up!


What will you need:
For Dosa Batter:
  1. 1 ½ cup Par boiled Rice
  2. ½ cup Raw rice
  3. ½ cup Whole urad dal
  4. Salt to taste
For Filling:
  1. 500 gms Potatoes
  2. 2 Onion
  3. 2-3 Green chilli
  4. ¼ tsp Turmeric powder
  5. Curry leaves
  6. Salt to taste
  7. 2 tbsp Oil
  8. 1 tsp Mustard seeds
  9. ¾ tsp Urad dal
How to make it:
  • Soak par boiled rice, raw rice, urad dal  in enough water for 4-5 hours.
  • Wash and grind everything together to a smooth texture adding water, a little at a time.
  • Add needed salt and leave it overnight to ferment. The fermenting time differs according to the climatic conditions.
  •  Before making dosa, add little water and mix well to get the dosa batter consistency
  • Pressure cook potatoes, mash it and keep it aside.
  • In a cooking pan, heat oil, add mustard seeds, when it splutters, add urad dal.
  • When dal turns golden brown, add thinly sliced onions, green chilli and curry leaves. Saute for a few minutes until onion turns golden brown.
  • Add turmeric powder, salt and mashed potatoes.
  • Mix well.
  • Heat a non stick tawa, add a drop of oil and rub with a wet cloth the entire surface. Once the tawa is heated, bring the flame to medium and pour a ladle of batter in the center.
  • Using the back of the ladle, spread the batter in a circular motion. Drizzle a tsp of oil around the dosa.
  • Once the edges starts browning and the dosa is cooked, add 2-3 tbsp of potato masala and fold the dosa. Remove from tawa and serve hot.
  • Serve hot with Sambhar and coconut chutney.
"Did you know" fact about Masala Dosa:

Masala Dosa is said to have originated out of the need to hide the onions which Brahmins were prohibited from eating. It is said that earlier only curry of potato was served separately along with dosa as Brahmins who cooked dosa were not allowed to eat onions. However in times of potato shortage, the stuffing got more of onion along with potato, and hence to hide it, it was moved inside the dosa - and masala dosa was born!
